Read the following passage and then complete the task below:

This is Mr Collins. He owns the local butcher shop in a small shopping centre in Redcar. He has worked as a butcher for nearly thirty years. His shop is open every day of the week and has many customers coming into his shop to buy what they need. Jamie is his assistant and they are usually very busy early in the morning, getting ready to open at 9 o’clock. It isn’t easy being a butcher because there is always a lot of work to do. Once Mr Collins receives his delivery, he and Jamie start to prepare the meat and chicken for sale. They cut the beef into cubes, mince the lamb, beef and chicken. Some customers prefer lean meat, so Jamie's job is to make sure all the fat is removed from the meat. Other customers like boneless meat and chicken, while others prefer skinless chicken. Mr Collins also sells chicken breasts, legs and wings. A lot of his customers come in asking for liver and kidneys. Some come in on a Saturday to buy a leg of lamb or a whole chicken for their Sunday lunch. One of his best-sellers are his delicious sausages. He sells around five hundred in a single week.
